The secret ingredient? Heavy whipping cream! The high fat content makes it perfect for whipping into butter.
There are two ways to make butter: shaking cream in a jar or using a mixer.
Pour heavy cream into a clean mason jar, filling it halfway. Screw on the lid tight and shake vigorously for 15-20 minutes.
The cream will thicken, then turn to whipped cream, and finally separate into butter and buttermilk.
Pour heavy cream into a chilled stand mixer bowl. Whip on medium speed until the cream thickens and separates into curds (butter) and buttermilk. This takes about 5-10 minutes.
For both methods, drain the buttermilk from the butter curds. Rinse the butter with cold water to remove any remaining buttermilk. This helps preserve the butter.
Knead the butter with a spoon or your hands to expel any remaining buttermilk and form a smooth mass.
For a touch of flavor, add a pinch of salt to the butter at this stage.
